The oilfield is an uncharted territory for me until very recently my husband introduced to me the intricacies of oilfield business. He has been in this job for the past 30 years and still going. I am proud to say that we are the least bit hit by the economic crisis that most people have been very unlucky lately. I am a practicing lawyer in my hometown while husband works for Nabors in Saudi Arabia on a 35/35 days rotation.

I am looking forward to meeting friends here especially oilfield wives whose experiences are more wide, diverse and those who have in-depth knowledge of what it would take to be an oilfield wife...for this has been a journey of kaleidoscopic emotions and a roller-coaster ride of excitement.

Hey Mel, sorry it took me so long to get back to you. Here's the recipe.

Chicken Creole

I chicken(or pack of chicken breasts)
1t. salt; 1/4 t. pepper
1 can diced tomatoes
1can rotel tomatoes
I chopped onion and bell pepper
5 cups water
1/2 lb to 1 lb. of sausage
1/3 cup flour
1 cup of cooked rice

Boil chicken in 5 cups of water w/ salt and pepper. Save broth. Slice and cook sausage. Remove and saute' onion and bellpepper in drippings. Add flour to make roux, gradually stirring in broth. Add tomatoes and sausage. Simmer from 30 mins. Add chicked and rice. Stir and simmer until hot.

Here's and easy on for Dirty Rice. Not quite like the traditional Cajun dirty rice but it is good. I watch my sister-in-law make herself sick on it, lol
Dirty Rice

1lb. ground beef
I cup raw rice
I can cream of mushroom soup
I can French Onion soup
Bell pepper(chopped)
Onion(chopped)
Brown hamburger meat and add in onion and bellpepper to saute'.
Remove and combine in bowl with other ingredients. Mix together and put in glass baking pan or cassarole dish. Cover and cook on 350 for about an hr until rice is done.

Nice to see you here , we are in small global village, your Husband was my boss in my previous company, he is a kind person, and still I have online communication with him, thru email or YMessenger etc,

I really miss him seriously, you just ask him about me he will tell you all the jokes we do there, I never feel that I am interacting with Boss, this was his quality, you are lucky that you got Alton as Hubby.
